it depends on the VPN configuration.
In the VPN settings you can also set the DNS servers to use while the VPN is active.
If you use the OpenVPN, SSTP or OpenConnect protocols you can also use the "Ignore pushed DNS servers" option

• Fix: The On demand service configured without an IPv6 route, blocked the IPv6 protocol

• Allows importing OpenVPN/WireGuard configurations also from zip files

You can find the ip address at the beginning of the VPN log.
If the VPN is connected by on demand, you will find a line like:
"Connecting request by on demand (dst ip address)"
Unfortunately it is not possible to know which app sent the data
