So it seems that the problem is due to the VPN restarting while the device is connected to Android auto (It seems like an Android ROM issue).
Maybe you can still set the "Set max handshake attempts before reconnecting" option but with a higher value, so as to avoid the VPN restarting while the device is connected to Android auto and the connectivity does not allow to contact the remote server

That was the same that I thought of today in the morning, will try that and get back to you
